Our favorite uses are:
- a bowl of granola top with fresh fruit and icy cold milk
- a serving of yogurt topped with berries and a sprinkling of granola
- before baking muffins, a light sprinkle on the top of batter adds a nice crunch
- my son's favorite is to add to a peanut butter and banana wrap
- toasted bagel, peanut butter, sliced strawberries and granola

Ingredients
Dry Ingredients
- 3-1/2 cups rolled oats
- 1/2 cup coconut - unsweetened
- 1-1/2 cups assorted nuts and/or seeds
- 1/2 tsp salt
- 1/3 cup brown sugar
- 1-1/2 tbsp cinnamon
Liquid
- 1/3 cup coconut oil
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp almond extract
Servings: cups approx
Instructions
- Preheat oven to 350º
- In a large bowl, combine the dry ingredients and mix well.
- Melt coconut oil in microwave in for 20 seconds.
- Add remaining liquid ingredients to coconut oil and stir well.
- Pour liquid mixture over dry ingredients and combine until evenly coated.
- Spread mixture evenly onto cookie sheet.
- Bake for 7 minutes, gently stir and bake for an additional 7 minutes or until golden brown.
- Cool completely before storing in an air-tight container.
