A healthier blend of chili using ground turkey, with cumin and extra lime!
Ingredients
- 1.5 tsp olive oil
- 1.5 lbs ground turkey
- 1 large onion chopped
- 4 stalks cellery chopped
- 1/2 pepper large chopped
- 1.5 cups beef stock or Liptons beef and Onion Soup mix
- 1.5 cups water
- 1 28 oz can crushed tomatoes
- 1 16 oz can light red kidney beans smashed with fork
- 1 tbsp garlic minced
- 1.5 tsp chili powder to taste
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp ground cayenne optional
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
Sour Cream Topping
- cumin to taste
- lime zest to taste
- lime juice to taste
- sour cream mixed half with plain greek yogurt

- Heat oil over medium heat. Add ground turkey and cook until brown. Add onions, celery and peppers. Cook until tender (5 min). Add remaining ingredients. Bring to a boil and reduce to low. Simmer with lid on for 45-60 minutes.
Serving
- Sprinkle with shredded cheddar cheese, dollop of lime sour cream (below), sprinkling of thinly sliced green onion (or chopped cilantro) and a wedge of lime on the side of bowl (squeeze on top).
Topping
- sour cream (to reduce calories use ½ sour cream & ½ plain Greek yogurt), cumin, lime zest, lime juice to add more dimension of flavor. I don’t measure but do like a strong lime flavor.
