Heat oil over medium heat. Add ground turkey and cook until brown. Add onions, celery and peppers. Cook until tender (5 min).
Add remaining ingredients. Bring to a boil and reduce to low. Simmer with lid on for 45-60 minutes.
Serving
Sprinkle with shredded cheddar cheese, dollop of lime sour cream (below), sprinkling of thinly sliced green onion (or chopped cilantro) and a wedge of lime on the side of bowl (squeeze on top).
Topping
sour cream (to reduce calories use ½ sour cream & ½ plain Greek yogurt), cumin, lime zest, lime juice to add more dimension of flavor. I don’t measure but do like a strong lime flavor.
