In honor of November’s turkey day coming up and the fact one of our good friends is in town, seemed the perfect opportunity to make my homemade Turkey Lime Chili.
For those who find it difficult to purchase ground turkey, substitute using ground been or ground chicken.
Due to having Crohn’s, I use a fork to smash the kidney beans and lean towards the gentle side with the chili powder although it’s still flavorful.
Typically I 3 to 4x this recipe because it freezes so well. Adding a crispy house or ceasar salad and either garlic bread, cornbread or nacho chips makes it a perfect busy weeknight supper.
Do you have kids who won’t eat chili? Need a quick game day appetizer? Blend chili until smooth. Pour into a shallow casserole dish; cover with shredded cheese and bake in 375 degree oven until hot and the cheese is bubbling. Sprinkle thinly slices green onions on top. Serve with nacho chips. Kids will eat anything if you call it dip!!!
- 1.5 tsp olive oil
- 1.5 lbs ground turkey
- 1 large onion chopped
- 4 stalks cellery chopped
- 1/2 pepper large chopped
- 1.5 cups beef stock or Liptons beef and Onion Soup mix
- 1.5 cups water
- 1 28 oz can crushed tomatoes
- 1 16 oz can light red kidney beans smashed with fork
- 1 tbsp garlic minced
- 1.5 tsp chili powder to taste
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp ground cayenne optional
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- cumin to taste
- lime zest to taste
- lime juice to taste
- sour cream mixed half with plain greek yogurt
- Heat oil over medium heat. Add ground turkey and cook until brown. Add onions, celery and peppers. Cook until tender (5 min). Add remaining ingredients. Bring to a boil and reduce to low. Simmer with lid on for 45-60 minutes.
- Sprinkle with shredded cheddar cheese, dollop of lime sour cream (below), sprinkling of thinly sliced green onion (or chopped cilantro) and a wedge of lime on the side of bowl (squeeze on top).
- sour cream (to reduce calories use ½ sour cream & ½ plain Greek yogurt), cumin, lime zest, lime juice to add more dimension of flavor. I don’t measure but do like a strong lime flavor.
